Blueberry Lemon Breakfast Oat Bar

I am always trying to find quick, easy meals I can prepare in advance so I can just grab ‘n go in the morning as we are rushing out the door to daycare and work. I love making egg muffins or oat bakes because you just have to mix up the ingredients and throw it in the oven.

This week, I was lazy and didn’t do any meal prep on Sunday. I woke up on Monday morning bummed I didn’t have anything ready for the week so naturally I decided to start meal prepping at 6am. I quickly threw together this recipe and I am super happy with how it came out. It is moist, but not too moist, and sweet, but not too sweet. It is filling and easy to make and it will last you all week which means it meets all my criteria!

Blueberry Lemon Breakfast Oat Bar

Emerson even ate it for dinner last night which is an added bonus. I love when we have meals prepped that the whole family can enjoy!

This breakfast was inspired by Tone It Up Blueberry Lemon Zest Muffins. I added some protein and took out some sugar. You can drizzle with maple syrup or top with a dallop of peanut butter. Both would be amazing additions to this berry delicious breakfast!

Blueberry Lemon Breakfast Oat Bar

Prep Time: 5 minutes

Cook Time: 15 minutes

Serving Size: 6

Calories per serving: 140

Ingredients

  • 1 1/2 cups whole grain oats
  • 1 scoop Tone It Up Vanilla Protein
  • 1/4 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 lemon, juiced (save the rind for zest at the end, optional)
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 banana, mashed
  • 2 Tbsp. maple syrup
  • 1/2 cup unsweetened almond milk
  • 1/2 cup fresh or frozen blueberries
  • coconut oil spray

Instructions

  1. Preheat the oven at 350 degrees
  2. Combine all dry ingredients in a bowl
  3. In a separate bowl, combine all the wet ingredients (except blueberries)
  4. Add the wet ingredients to the dry ingredients and mix together
  5. Fold in the blueberries
  6. Spray a baking pan with coconut oil spray and add mixture
  7. Bake for 15 minutes or until a toothpick comes out clean
  8. Sprinkle with lemon zest

Work has and continues to be crazy. I leave completely drained and exhausted. But my one place of solitude is at yoga. I find the classes to be incredibly therapeutic and every time the instructors do an amazing job of creating a theme and sequence with music that completely and totally relates to me and my life.

Tonight I had all these plans to go for a run and do yoga but I ended up having to stay at work late. I rushed and managed to make it to the 7 o’clock yoga class. It was exactly what I needed! I left feeling open, relaxed and present.

The theme of the class was about letting go and trying something new. The teacher emphasized working through postures in a different way than we are used to. She told us to let gravity do the work and notice how our body feels in space. It was very much about being aware of where we currently are and how we could let go.

This translates so well to my life right now. Recently, I find myself thinking about what I really want to do with my life and instead of making a chance and letting go of what is comfortable, I continue to do the same thus I get the same results.

I encourage you to look at your life and see if there are places where you are not happy and could do something different to make a positive change. Where can you let go and try something new in order to get a difference result?

For me, I am proud of myself for doing the CorePower Teacher Training. I want to find a way to balance my 9-5 job with my yoga passion and ideally incorporate teaching yoga classes into my weekly schedule. Since I have done all this training. I want to use my certification and teach! I feel like this will be a positive thing I look forward to outside of my exhausting and stressful full-time job.

Elimination Diet Take 1

Happy Friday! I am so ready for a long weekend. I need some time to relax, recoup and reflect on the summer. It’s been a great few months but it’s also been a whirlwind. Vinnie and I are going to spend some time with family and friends in Vermont. I plan to get a lot of hiking, swimming and boating in. Whenever we go away there is always a lot of temptation in regards to food and alcohol which always tests my will power – typically (and unfortunately) my will power usually loses!

I have talked about my stomach issues and frequent discomfort on the blog before. Well, this summer has been no different with pain, bloating and lots of discomfort. Recently I have been getting an itchy mouth and headaches when I eat a lot of foods so I decided it’s time to buckle down and really try to figure out what is going on. I found on Pinterest this Easy Elimination Diet that I started on September 1st. It pretty much has phases where you eliminate certain foods and then slowly add them back in. To start I am eliminating gluten, dairy, soy and eggs.

So far, I am proud of myself, I have resisted a work party that had lots of snacks filled with gluten and cheese, I have avoided just eating “anything” when I am super hungry and I have not just “had a bite”. It hasn’t been easy but it feels good to use my willpower and be more in control of what I am eating.

The biggest challenge has been figuring out what to eat for Breakfast. I can’t eat eggs, dairy or gluten so I have stuck to a strictly gluten-free oatmeal breakfast with some yummy add-in’s like peanut butter, nuts, raisins, and I even made it with zucchini one day. But, oatmeal is going to get old so if you have any breakfast suggestions, send them my way!

My biggest win of the week would be at my work party and resisting the urge to eat all the food around me. But even more so, I was about to eat the chips and salsa because a lot of times chips are made of corn (not flour or wheat) but I decided to look at the label first. There was nothing listed on the label so I asked the woman who brought them in and she said they did  in fact of gluten. In the past, I have never wanted to ask or acknowledge that I am eating gluten free and as a result I would end up eating it especially at parties and restaurants. It felt good to take control and make an educated decision about what I was eating by asking what was in the food. And, it turned out the chips had ingredients I was avoiding so it was a good thing I asked.

This weekend will be a challenge to stay on track but I know I will feel better and it will ultimately help me figure out what causes all the stomach pain, bloating and gas. Wish me luck!

Work Travel Eats

I just got back from a week away for work. I was out in Grand Rapids, Michigan for a trade show and brand conference. It was really pretty in Grand Rapids – I didn’t get out to explore too much but I did run outside a few days and it seems like a great place to raise families and be a part of a community. On Saturday morning I was out and about and there was a million events, races, fundraisers, etc… it was really fun to see the city come alive!

Grand Rapids has amazing food, wine, culture and art. There are a ton of museums, brewery’s, farm-to-table restaurants, and more. On previous trips I have been able to go explore the city and enjoy the food and wine a bit more. This trip I was super busy and barely left the hotel and convention center.

I ordered room service for breakfast to ensure I got a good healthy meal to start off my day. I have never done room service but it was super fun – I felt so special and fancy!!

I ordered an egg white omelet with mushrooms, peppers and spinach, coffee, and toast. It came with a mini ketchup bottle and super yummy  mini jars of jam.

Lunch most days was terrible but I did manage to have one good meal which tasted so good and refreshing. I had an organic mixed green salad with salmon.

Now that I am home, I am really focusing on eating super clean! I have been feeling crappy lately so I am hoping that I can get back on track with my eats and start to feel better. I know I have been saying that a lot lately, but clearly it’s on my mind and I am trying hard to get back on track.

Mother’s Day Weekend Eats

Usually on the weekend I have a really hard time staying on track and eating lean, clean and green. More times than not, I snack a lot, eat really greasy, fatty food and drink beer and wine. I go into the weekend saying I am going to stay on track, but always end up falling off the wagon. It’s ok though, because if 5 out of 7 days of the week I am “good”, that is a win in my book. Maybe one day I will gain the will power and resist the weekend munchies!

This Mother’s Day Weekend I ate lots of great food and drank really good cocktails and wine. I actually ate way healthier than normal! I shared some of the pictures in my weekend recap, but for What I Ate Wednesday I wanted to take a deeper dive into my Saturday Eats and share with you all my deliciously fresh Vermont food.

We had a BBQ Dinner on the deck and ate fresh grilled burger from a local cow. The DiNaps buy 1/2 a cow once a year and they get enough meat to last most of the year. It is super cool and the meat is also super fresh and organic. I like knowing where my meat comes from but it also kinda of makes me said thinking about the poor cow. Knowing he’s local makes it more personal. Speaking of local, the lettuce for the salad is from the local the CSA, and then for additional sides we had baked beans and under the salad are baked sweet potato fries (those two things weren’t local!)

What I don’t have pictured are the handfuls of almonds and dark chocolate pomegranate seeds, multiple magic bars, wine and second helpings of dinner. But, all and all, it was a great day of super good, healthy foods from Vermont.

Spring has Sprung

This past weekend we finally saw the first signs of Spring here in Boston.  Sunday was incredibly nice!! I went for a run and could not stop taking pictures, smiling and enjoying  the spring air. I ended up running an extra 3.5 miles because I was having so much fun!

The Charles River was full of  sail boats, the park was full of kids playing soccer and the walking path had rows of people walking, running and biking.

All this nice weather makes me excited to get outside and energized to exercise. I have been looking for that extra push to get in shape and work out. The nice weather is helping and I plan riding this wave as long as I can!

Strawberry Banana Coconut Smoothie

This smoothie was so good and so easy to make. I may of had two!

Coconut Strawberry Banana Smoothie

1 cup of strawberries

1 banana

1 scoop protein powder

1/2 cup unsweetened coconut almond milk
1 cup of water

Put in your blender and mix until it is all blended together and smooth.

Back Bay Chopped

Hello Friends!

I am really sorry I haven’t been around much. I am going to try really hard to be better about it. It is an April goal of mine. I love this community and the connection I have with all of you. I don’t want to loss that because “I am tired” and “things are busy”. Being healthy and fit and sharing my experiences and journey is my passion and makes me happy. I need to make time for my happiness.

So I am back here today to check in on my eats and share what I ate yesterday. I was fortunate enough to work in Boston for the day which meant a much easier commute (no driving required!) and bundles of more time at home.

I convinced Vinnie to get up early and take the 6am BoxFitt 360 class at The Club by George Foreman which is quickly becoming a go-to favorite on my monthly ClassPass schedule. It was great! You truly never regret a workout. Plus, it’s so fun to spend time with my husband and a get work out in.

After class, I headed home and Vinnie went to work.

I had enough time to make myself a glorious egg omelette with mushrooms, peas and spinach. I sat and ate it with my coffee and a glass of water.

For lunch, I had a giant Back Bay Chopped salad with almost everything in it including cheese, bacon and avocado from The Met Bar on Newbury St. Sorry no picture… I forgot to take one, plus I was with co-workers and it probably would of been a little weird.

I snacked on a lot of Tostitos chips and a grande Cafe Soy Misto. I can’t seem to get enough salty snacks and warm cozy coffees.

For dinner, we had some really delicious Garlic & Herb Chicken Sausage and Broccolini. It was super good, but I am still kind of hungry as I write this and have a wicked craving for something sweet.

I am trying hard to focus on my diet and fitness to get back on track. It’s been a little over a week of real focus and dedication and it’s going ok – there are definitely highs and lows but overall I am feeling much better which is the goal, right!?

A Day of Eats II

Happy Wednesday! 

I am trying really hard to eat better and get some good workouts in this week. I would give myself a C+ on the eating and an A- on the working out which is pretty typical for me. One day, I would love to an A in both!! 🙂

I pack my breakfast and lunch to eat at work every.single.day. It gets tedious and I have a hard time staying creative, but I am way too cheap to buy food every day! Yesterday, I packed up lots of fruits and veggies for my work day.

For lunch I had chicken with carrots, celery, cucumbers and Spicy Trader Joe’s Hummus which is sooooooo good. I had an apple for dessert [the meal is pictured in the top image – I just forgot to take a picture when i was actually eating it!]

Work stress plus late afternoon munchies made me reach for the snack draw at work. I munched on animal crackers which were actually super delicious. I should of stopped at half the bag, but I managed to eat my way through the whole thing. My bad.

I justified eating a whole bag of animal crackers by going to my first ever Flywheel class using my ClassPass. It was AWESOME! The music was loud, the energy was high and the workout was killer. My shirt was literally drenched after the 45 spin class. I have been loving ClassPass. So far, I have taken 5 great classes – I will do a recap of all the greatness soon!

After Flywheel I got home and Vinnie had made a pasta dinner with meat sauce. I typically do not like to eat pasta at night because of all the carbs, but I was starving so I chowed down!

I mentioned on Monday that this month I am going to try really hard to track my food and be very mindful of what I am eating. I always try to track my food in MyFitnessPal, but sometimes when I eat something really bad and I don’t want to admit it I will not add  because I know what it will do to my numbers which is terrible, but true and defeats the purpose of tracking my food. So this month, good or bad, I really want to see my total calories and understand how my calories are broken out.

Yesterday, I feel like my carbs were a little high and my protein was low. It’s crazy how much sugar I eat in a day. It is mostly natural sugar but it’s still really high with all the fruit I eat.

A Day of Eating

Hi, there!
I dropping in real quick today to say hi and give a day of my eats. I am traveling (again) for work and don’t have a lot of time in front of my computer. I hope everyone is having a good week. Happy hump day!

When I wake up in the morning, I have to have a big glass of water and a even bigger cup of coffee. It may be almost March, but I still love my frosty the snowman mug… Actually, I guess it is fitting given all the snow we still have (its just not Christmas anymore) 🙂

Super Charged Coffee and a Day of Eats

As I am sure everyone is well aware, things are bitter cold here in New England. Over the weekend, Vinnie and I went up to Vermont to ski with a bunch of our friends.  We skied all day Saturday, sat by the fire and hot tub’d on Sunday and relaxed on Monday before heading back to Boston. It was so nice to get out of the city for a little while… the snow has been brutal and a crippling. I am getting claustrophobic and stir crazy.

It was a blast being in VT with all our friends, but super cold! On Monday I woke up freezing and looked at my phone to see what the temperature was outside… it felt like -31. That is insane!

While getting away with our friends is always fun, I tend to overindulge and I end up feeling bloated, crappy and run down by the end of the trip. This trip was no exception! To add to it, I have been letting myself go recently. So… now that my birthday has passed and Valentines Day is over I am really going to try to focus on getting back on track and feeling good and confident about myself. That always starts with my diet and eats.

Since it is Wednesday, I am going to share my eats from yesterday to show how I am getting my eats back on track. I am focusing on healthy foods like fruit, veggies and lean meat.

When my sister comes to visit she always makes this crazy coffee concoction and I decided to give it a whirl this morning. It was really good and really filling! The mix is 1 tbs coconut oil, 1/2 cup almond milk and coffee. You blend it all together and it makes a frothy like drink that tastes just like a creamy latte.
